
Wiri Fire Grilled Shrimp Skewers. Pineapple Jalapeño Salsa
Grilled Shrimp Skewers
Ingredients (Serves 4):
For the Shrimp:
- 1 lb large shrimp, peeled and deveined
- 2 tbsp Wiri Fire Hot Sauce
- 2 tbsp olive oil
- 1 clove garlic, minced
- Juice of 1 lime
- Salt and pepper to taste
- For the Salsa:
- 1 cup fresh pineapple, diced
- 1 small jalapeño, finely chopped (seeds removed for less heat)
- 2 tbsp red onion, minced
- 1 tbsp cilantro, chopped
- Juice of ½ lime
- Pinch of salt
Instructions:
- In a bowl, whisk together Wiri Fire Hot Sauce, olive oil, garlic, lime juice, salt, and pepper. Toss in the shrimp and marinate for at least 30 minutes.
- While shrimp marinates, combine salsa ingredients and chill.
- Thread shrimp onto skewers. Grill over medium-high heat for 2-3 minutes per side, or until opaque and slightly charred.
- Serve hot with a spoonful of pineapple jalapeño salsa on top.
