Wiri Fire Grilled Shrimp Skewers. Pineapple Jalapeño Salsa

Grilled Shrimp Skewers

Ingredients (Serves 4):

For the Shrimp:

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp Wiri Fire Hot Sauce
  • 2 tbsp olive oil
  • 1 clove garlic, minced
  • Juice of 1 lime
  • Salt and pepper to taste
  • For the Salsa:
  • 1 cup fresh pineapple, diced
  • 1 small jalapeño, finely chopped (seeds removed for less heat)
  • 2 tbsp red onion, minced
  • 1 tbsp cilantro, chopped
  • Juice of ½ lime
  • Pinch of salt

Instructions:

  1. In a bowl, whisk together Wiri Fire Hot Sauce, olive oil, garlic, lime juice, salt, and pepper. Toss in the shrimp and marinate for at least 30 minutes.
  2. While shrimp marinates, combine salsa ingredients and chill.
  3. Thread shrimp onto skewers. Grill over medium-high heat for 2-3 minutes per side, or until opaque and slightly charred.
  4. Serve hot with a spoonful of pineapple jalapeño salsa on top.

Pair With:
Grilled corn with chipotle butter, a crisp watermelon salad, and a cold citrusy beer or spicy margarita.
